Savory Sweet Potato & Goat Cheese Egg Skillet

As a doula, it’s always nice when you can eat a good meal before attending a birth! When I have time to do so, I like to whip up some sort of egg skillet because it’s an unfussy and satisfying breakfast that keeps me energized. There is no exact recipe I follow – I happened to have these ingredients on hand and the flavor combination turned out to be incredibly delicious, but you can easily swap out red potatoes for sweet potatoes, tomatoes for peppers, parsley for thyme… or add your own extras such as white beans and kale, you get the idea!

Gather
  • 2 large sweet potatoes, peeled and cubed into 1-inch cubes
  • 6 tablespoons olive oil, divided
  • ½ onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, chopped
  • 2 teaspoons smoked paprika
  • Sea salt and freshly ground black pepper
  • 4 pasture eggs
  • 1-2 ounces goat cheese
  • 2 tablespoons fresh thyme
Method
  1. Place the cubed potatoes in a large saucepan of salted boiling water and simmer until tender. Drain and dry completely with a tea towel.
  2. Meanwhile, heat 2 tablespoons olive oil in a cast iron skillet over medium-high heat. Add the onions, bell pepper, and garlic, and sauté until tender and lightly golden, about 5 to 6 minutes. Season with salt and pepper and remove to a bowl.
  3. Add the remaining 4 tablespoons oil to the skillet and then add the drained and dried sweet potatoes. Cook in a single layer, stirring occasionally, on medium heat until they are tender, about 6 minutes. Increase the heat to high and cook, without stirring, until the potatoes are golden and crisp, about 2 more minutes. Sprinkle with the smoked paprika and gently stir in the onion mixture and thyme.
  4. Create 4 wells for the eggs. Crack an egg into each well. Reduce heat to low and cover the skillet with a lid. Cook the eggs until the whites are set, about 4 to 5 minutes. Check the eggs constantly to make sure that you don’t overcook them. If you want sunny side up eggs, you can separate the egg whites from the yolk when you crack the egg. Drop the egg whites in one of the wells on the pan. Next, add the yolk on top immediately afterwards
  5. Serve with a sprinkling of your favorite fresh herbs.
